Seeking advice

I've just joined this list and so far, its been interesting.  I am seeking
advice on how to get involved in development work.  I am currently finishing
my PhD at the University of Hong Kong.  I am a plant pathologist and my main
area of experience is horticultural crops such as citrus and macadamia.  I
have been looking around various web pages for organisations involved in
development work.  It seems that across the board, you need experience in
development work before they are interested.  My question is how to gain
this very necessary experience if no one will take you on until you have
some?  I would love to become involved in the area of postharvest loss.
Anyway, any information or advice would be most appreciated.
