The DeskScan software that ships with the HP products can be configured to increase the view size of the preview image. You might check the user manual for instructions, or reply to me privately. (Which platform are you using, Mac, PC or UNIX?)
As an alternative, if your workstation is set up with current software, you can acquire the images directly into Photoshop using the file/acquire/TWAIN option.
