Manuscript scanning.

I strongly recommend separating the imaging-scanning part of scanning the document from the OCR phase. Since the document is in poor condition--I assume it is valuable--I would photograph the pages then scan the photographs onto Kodak Photo-CD. This gives you a high-quality archival copy.

Now you can take all the time you want for the OCR process--it probably will not be easy for a poor-quality original. Wlat
