I have a wonderful Fujitsu M3096G scanner which *consumes* all that can be feed in its direction. A wonderful piece of equipment that could work for fifty years without a pause. I only use OCR with it and haven't checked into grayscale software.

We also have several of the sub $1,000 scanners which quickly screech and groan and clink and clank, but still work fine.

My experience is on NeXT Computers and so are UNIX-based.
