I suggest you contact your local security firm who have video
surveillance systems. There are systems that have two or more video
cameras that map certain areas - so that as soon as any anomoly is
recorded the system alerts seurity. Its all software driven so a
modification to digitise a frame would be very simple.
Also gives you a wider range of ccd cameras to choose from.

The next step would then be to experiment with two cameras and record in 3d your experiments.
