Not necessarily relevant to imaging but we need to have some fun too. My curiosity was aroused so I looked it up in Rogers: The Dictionary Of Cliches. It reads "Proof of the Pudding Is in the Eating.... an old proverb. One version of it dates to the 14th century. A translation in 1682 of Bileau's Le Lutrin offered this: The proof of th' pudding's seen i' the eating."
