Actually, even high-contrast film will have a fair amount of gray if the source has it. For those other than Mark Olson who are interested, Mekel/Amitech (who make the scanners most service companies use) have an 8-bit scanner they demonstrated in December, but which is not yet delivered to suppliers (any day now, they say), and Sunrise has an 8-bit scanner as well (to the best of my knowledge).
